Here’s a great appetizer or side dish that you can make in 20 minutes flat. Wrap asparagus spears in prosciutto with a little dijon mustard and roast in the oven until just crispy. Serve the great looking bundles hot or cold topped with a little balsamic vinegar or squeeze of lemon. Check out the recipe and how-to video:
RECIPE
Ingredients:
- 1 bundle large asparagus (bottoms removed)
- 6 slices prosciutto
- 3 tablespoons dijon mustard
- Zest of 1/2 lemon
- Extra virgin olive oil
- Balsamic Vinegar
- Salt & cracked pepper
Steps:
- Preheat oven to 350 degrees
- Wash asparagus and snap or chop tough bottom section (usually the bottom third).
- Lay out 1/2 piece of thinly sliced prosciutto and place 3-4 asparagus spears in center
- Dab asparagus with dijon mustard and wrap prosciutto around asparagus spears creating tight bundle
- Place bundles on foil lined baking sheet and drizzle with olive oil, zest of lemon and salt and cracked pepper
- Bake for 15 minutes until prosciutto and asparagus begin to crisp
- Drizzle with a little balsamic vinegar or lemon juice and serve bundles hot or cold
